Keto Jelly Donut Bites

Mini keto muffins filled with sweet sugar free jelly, these jelly donut bites are a fun family-friendly treat. Nut free and sugar free.

Okay, I had way too much fun coming up with these little keto jelly donut muffins. See how cute they are? Possibly the cutest snack I’ve ever made.

The idea of turning mini muffins into keto friendly donuts is not new. I’ve done it in the past with these apple cider donut bites. And I have a pumpkin donut bites recipe in The Ultimate Guide to Keto Baking as well.

But these keto jelly donut bites take the whole concept a step further, with a fun sugar free jam filling. I know you’re going to love them!

Coconut Flour Donuts

Coconut flour is one of my favorites for making any sort of sugar free or keto donut. Almond flour can work too but coconut flour makes them lighter and fluffier, in my opinion.

So even though technically, these are mini muffins, I chose to use coconut flour for that same donut-like consistency.

It’s actually a similar recipe to both my Keto Samoa Donuts and my Keto Mini Donuts. For all of these recipes, I used a bit of protein powder to make them even lighter.

Jelly Donut Muffin Inspiration

It was these delicious looking donut muffins from Rock Recipes that caught my eye. They were so pretty, I wanted to try giving them a keto makeover.

I did a bit of research on how to make jelly donuts and muffins. And I really wanted to follow the method of simply poking into the muffin with a piping bag.

Alas, keto muffins simply aren’t the same as wheat-based muffins. No matter how hard I tried, I couldn’t get much filling into the center of the muffin.

So I ended up going a more familiar route and cutting a little cone out of the top of each muffin. That way, you can fill them with more filling and replace the tops.

If you really want them to resemble jelly donuts, you can then push a little bit of filling into the sides with a piping bag.

How to make keto jelly donut muffins

The “jelly” filling

Make the filling first so it can cool properly before you fill the mini muffins. This is really more of a keto berry sauce but it does the trick! And if you prefer strawberries or blueberries, those work too.

The filling does require some glucomannan or xanthan gum to thicken it. You could also try using just a little gelatin (about 1 teaspoon) as well.

The coconut flour muffins

These little mini muffins are super easy to make. A few tips for getting them light and fluffy.

  1. Use a metal baking pan. I first tried this recipe in a silicone mini muffin pan and they flattened out a lot on the top. They also were more shallow and it was hard to fill them properly.
  2. If your coconut flour tends to clump up, sift it before mixing in any other ingredients. Nothing ruins a muffin like a clump of coconut flour.
  3. Whey protein is the best choice for the protein powder. Egg white protein tends to make them a little rubbery. If you really don’t want to use whey, then skip it altogether.
  4. The amount of liquid you add depends on your coconut flour. It varies so much brand to brand. You want the batter to be easily scooped and stirred, but not so liquidy that you can pour it into the pan.
  5. Let the mini muffins cool completely before attempting to fill them or roll them in sweetener.

Assembling the donut bites

This is a little messy but fun.

  1. Use a small sharp knife to cut into the tops at an angle, so that you get a cone shaped core.
  2. Cut off the part that would be the top of the muffin. Reserve this for closing up your donut bites after filling. Discard the rest.
  3. Spoon or pipe the jelly filling into the holes, filling them almost to the top.
  4. Replace the top of the muffin.
  5. Roll in powdered sweetener. You could also do granulated sweetener if you prefer. This is a bit messy and you will end up with sweetener all over your fingers. But it helps give you the real “jelly donut” experience!

Instructions

Jelly Filling

  • In a small saucepan over medium heat, combine the raspberries and water. Bring to a simmer, then reduce the heat to low and cook until the berries are soft enough to be mashed with a fork.

  • Mash them up, then stir in the sweetener and the glucomannan. Let cool.

Mini Muffins

  • Preheat the oven to 350F and grease a metal mini muffin pan well. If yours is not very non-stick, consider using silicone or parchment muffin liners.

  • In a large bowl, combine the coconut flour, sweetener, protein powder, baking powder, and salt. Add the eggs, melted butter, water, and vanilla extract and stir to combine. If the batter is very thick, add another tablespoon or two of water. It should be easily stirred but not really pourable.

  • Divide the mixture among the prepared muffin cups and bake about 15 minutes, or until the tops are firm to the touch. Remove and let cool completely in the pan.

To assemble

  • Once the mini muffins are cool, use a small sharp knife to cut a small cone out of the top of each. Cut off the top of the cone (the part that would be the top of the muffin) and reserve.

  • Fill the holes in the mini muffins with the raspberry filling and replace the tops. Roll the filled mini muffins in powdered sweetener.

  • **If you REALLY want them to look like jelly donuts with jam oozing out a hole in the side, you can pipe a tiny bit of the raspberry filling into the side.
